Spicy Avocado Corn Waffles
Skip the corn kernels for a lower carb version.
Ingredients
- 1 avocado, ripe, peeled, pitted
- 1/2 cup cornmeal
- 1/4 cup almond flour, or spelt or whole wheat
- 2 large eggs
- 1/3 cup milk, your preferred
- 1/3 cup corn kernels, fresh or thawed from frozen
- 1 tsp baking powder
- 1/4 tsp sea salt
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 small jalapeno, diced finely
- 1 tbsp cilantro, chopped
- 2 cloves roasted garlic, optional
- 1/2 tbsp caramelized onion, optional
Garnish
- 1/4 cup salsa
- 2 tbsp greek yogurt, fat-free
- 1 tbsp cilantro, chopped
- 2 wedges lime
Instructions
Mash the avocado in a mixing bowl until smooth. Add the eggs and milk, and whisk until evenly combined.
In a separate bowl, combine the cornmeal, flour, baking powder, garlic, smoked paprika, and salt.
Lightly grease the waffle iron with olive oil spray and preheat it according to the manufacturer’s instructions.
Scoop the batter into the waffle iron (adjust portion size to your waffle iron). Cook until golden brown and crispy, about 4-5 minutes.
Garnish with salsa, nonfat Greek yogurt, chopped cilantro, and lime wedges.
