Roasted Sweet Potato with Spinach and Egg
Roasted sweet potato might be simple. But it goes so well with egg and greens for an easy, balanced meal.
This is a basic recipe that’s great for meal preppers or throwing together a last-minute healthy meal with some basic leftovers.
If you are meal prepping this to eat later, make sure to hard boil the egg.
If topped with feta, goat cheese, sunflower seeds, or pumpkin seeds, a single portion comes to around 480 calories. If you want to trim things down a little, skip the extra toppings and rely on a good organic, pastured, or omega-enriched egg for your healthy fats.
You can also airfry your sweet potato and water saute the spinach to avoid oil.

- 1 medium sweet potato, about 200 grams
- 2 tsp extra virgin olive oil, optional
