Mix the batter
Mash the avocado in a mixing bowl until smooth. Add the eggs and milk, and whisk until evenly combined.

In a separate bowl, combine the cornmeal, flour, baking powder, garlic, smoked paprika, and salt.

Combine the wet, dry, and other ingredients
- Stir the dry ingredients into the avocado mixture until just combined.
- Fold in the diced jalapeño, cilantro, corn kernels, garlic cloves, and onion gently to distribute evenly.

Preheat the Waffle Iron
Lightly grease the waffle iron with olive oil spray and preheat it according to the manufacturer’s instructions.

Cook the waffles
Scoop the batter into the waffle iron (adjust portion size to your waffle iron). Cook until golden brown and crispy, about 4-5 minutes.
