  1. Make the flax egg
    In a small bowl, mix ground flaxseed with water and let it sit for 5 minutes to thicken.
  2. Prep the sweet potato

    Steam or bake a sweet potato, then mash until smooth.

  3. Steam the tempeh

    Cut tempeh into cubes and steam it for 10 minutes.

  4. Mix the sweet potato and tempeh

    Mash the sweet potato, crumble in the tempeh, and mix it up.

  5. Mix dry ingredients
    In a mixing bowl, combine oat flour, smoked paprika, cumin, baking powder, and salt.
  6. Combine wet and dry
    Add the mashed sweet potato, crumbled tempeh, almond milk, and flax egg to the dry ingredients. Mix until a thick batter forms.
  7. Make the waffles
    • Lightly grease the waffle iron with olive oil or non-stick spray. Preheat according to the manufacturer’s instructions.
    • Scoop batter into the waffle iron (adjust based on your waffle maker).
    • Cook for 5-6 minutes until golden and firm.
  8. Garnish and Serve
    Top with avocado slices, tahini, or sautéed mushrooms for a balanced, savory meal.
