It's a simple and perfect base for a sweet yet healthy brunch menu, savoury waffles, or seasonal winter or fall spices.
If the sweet potato isn't sweet enough, add a tbsp of maple syrup or sprinkle stevia/monk fruit.

Prep avocado and sweet potato
Mash the avocado in a bowl until smooth. Mix with the sweet potato puree. -
Whisk cornstarch and spices
In another bowl, whisk together the cornstarch, sea salt, and your spices.

Combine eggs, mashed ingredients, and dry ingredients
Beat the eggs into the avocado-sweet potato mixture, then fold in the dry ingredients until smooth. -
Make waffles
- Lightly grease the waffle iron with olive oil spray and preheat according to the manufacturer's instructions.
