High-Protein Savoury Quinoa Tofu Herb Waffles

Ingredients

  • 1 cup silken tofu, 250g
  • 1/2 cup quinoa flour, 60g
  • 1/3 cup unsweetened almond milk, 80mL
  • 2 flax eggs, ( 2 tbsp ground flaxseed + 5 tablespoons water)
  • 2 tablespoons chopped fresh herbs, e.g., parsley, dill, or chives
  • 1 teaspoon baking powder
  • 1/4 teaspoon garlic powder, optional
  • 1/4 teaspoon salt, optional
  • Olive oil or non-stick spray, for waffle iron

Creamy Lime-Avocado Dip

  • 1/4 medium avocado, ~50g
  • 1 tablespoon lime juice, ~15mL
  • 1 tablespoon unsweetened almond yogurt, ~15g
  • Salt to taste

Instructions

Waffles

  1. In a small bowl, mix ground flaxseed with water and let it sit for 5 minutes to thicken.

  2. In a blender or food processor, blend silken tofu and almond milk until smooth.

  3. In a small bowl, combine the flax egg with blended silken tofu and almond milk.

  4. In a mixing bowl, whisk together quinoa flour, baking powder, garlic powder, and salt.

  5. Stir the tofu mixture into the dry ingredients until fully combined. Fold in the chopped fresh herbs.

  6. Lightly grease the waffle iron with olive oil or non-stick spray. Preheat according to the manufacturer’s instructions.

  7. Scoop batter into the waffle iron (adjust portion size to fit your waffle maker). Cook for 4-5 minutes until golden and set.

Avocado Lime Topping

  1. Mash avocado

  2. Add lime juice, unsweetened vegan yogurt.

  3. Whip up until creamy.

  4. Add sea salt to taste.
