Roasted Sweet Potato with Spinach and Egg
Roasted sweet potato might be simple. But it goes so well with egg and greens for an easy, balanced meal.
This is a basic recipe that's great for meal preppers or throwing together a last-minute healthy meal with some basic leftovers.
If you are meal prepping this to eat later, make sure to hard boil the egg.
If topped with feta, goat cheese, sunflower seeds, or pumpkin seeds, a single portion comes to around 480 calories. If you want to trim things down a little, skip the extra toppings and rely on a good organic, pastured, or omega-enriched egg for your healthy fats.
You can also airfry your sweet potato and water saute the spinach to avoid oil.

Prepare the Sweet Potato and Greens

Roast the Sweet Potato
- Preheat your oven to 400°F (200°C).
- Toss the diced sweet potato with 2 tsp olive oil, smoked paprika, cumin, salt, and pepper.
- Spread evenly on a small baking sheet and roast for 20–25 minutes, flipping halfway through, until golden and tender.

Saute the Greens
- While the sweet potato roasts, heat a small pan over medium heat. Add a splash of olive oil and sauté the spinach or kale until wilted. Season lightly with salt. Set aside.
Poach or Boil an Egg

Poach the Egg
- Bring a small saucepan of water to a gentle simmer. Add a splash of vinegar (optional) to help the egg hold its shape.
- Crack the egg into a small bowl, then gently slide it into the water. Cook for 3–4 minutes for a runny yolk. Remove with a slotted spoon.

Boil an Egg
- Place an egg in a small pot and cover it with cool water by an inch.
- Turn heat on high and bring the water to a rolling boil.
- Boil egg for 6-7 minutes for soft yolks or 10-15 minutes for firm yolks.
- Drain egg.
- Rinse under cold water until cool or place in bowl with ice and cold water.
Assemble

- Place the roasted sweet potato as the base of the bowl. Top with the sautéed greens and the egg.
- Sprinkle with crumbled feta, toasted seeds, and chili flakes or hot sauce (if using). Add avocado slices and a squeeze of lemon juice for extra flavor.
