Vegan Avocado Chickpea Waffles

Ingredients
  • 1 medium (200 g) avocado (ripe, peeled, pitted)
  • 1 cup chickpea flour
  • 1/2 cup water
  • 1/4 tsp turmeric
  • 1/4 tsp ground allspice or garam masala
  • 1/4 tsp sea salt
  • 1/2 tsp baking powder
  • 1 mist olive or grapeseed oil (for waffle maker)

  • 1 drizzle tahini

Instructions
  1. Mash avocado

    Mash the avocado in a bowl until smooth. Add the water and mix until evenly combined.

  2. Mix dry ingredients

    In a separate bowl, whisk together chickpea flour, allspice, turmeric, salt, and baking powder.

  3. Combine wet and dry

    Stir the dry ingredients into the avocado-water mixture until a thick, smooth batter forms.

  4. Make wafflesTop with tahini drizzle, roasted vegetables, and fresh herbs.
    • Lightly grease the waffle iron with olive oil or non-stick spray. Preheat according to the manufacturer's instructions.
    • Scoop the batter into the waffle iron (adjust the amount based on your waffle maker). Cook for 4-5 minutes until golden and firm.

  5. Serve

    Top with tahini drizzle, roasted vegetables, and fresh herbs.
