Spicy Avocado Corn Waffles

Waffle Batter
    Batter
  • 1 avocado (ripe, peeled, pitted)
  • 1/2 cup cornmeal
  • 1/4 cup almond flour (or spelt or whole wheat)
  • 2 large eggs
  • 1/3 cup milk (your preferred)
  • 1/3 cup corn kernels (fresh or thawed from frozen)
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • Spices and Seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 small jalapeno (diced finely)
  • 1 tbsp cilantro (chopped)
  • 2 cloves roasted garlic (optional)
  • 1/2 tbsp caramelized onion (optional)
  • Garnish
  • 1/4 cup salsa
  • 2 tbsp greek yogurt (fat-free)
  • 1 tbsp cilantro (chopped)
  • 2 wedges lime
Instructions
  1. Mix the batter

    Mash the avocado in a mixing bowl until smooth. Add the eggs and milk, and whisk until evenly combined.

  2. Mix the dry

    In a separate bowl, combine the cornmeal, flour, baking powder, garlic, smoked paprika, and salt.

  3. Combine the wet, dry, and other ingredients
    • Stir the dry ingredients into the avocado mixture until just combined.
    • Fold in the diced jalapeño, cilantro, corn kernels, garlic cloves, and onion gently to distribute evenly.
  4. Preheat the Waffle Iron

    Lightly grease the waffle iron with olive oil spray and preheat it according to the manufacturer’s instructions.

  5. Cook the waffles

    Scoop the batter into the waffle iron (adjust portion size to your waffle iron). Cook until golden brown and crispy, about 4-5 minutes.

  6. Garnish and serve😋

    Garnish with salsa, nonfat Greek yogurt, chopped cilantro, and lime wedges.
