Savoury Guacamole Spelt Waffles

Ingredients
    Batter
  • 1 medium (200 g) avocado (ripe, peeled, pitted)
  • 1 cup spelt flour (or almond or whole wheat)
  • 1/3 cup unsweetened almond milk (or your preferred choice)
  • 2 large eggs (best you can get)
  • 2 tbsp (30 ml) lime juice
  • 1 clove garlic (crushed or minced)
  • 2 tbsp cilantro, chopped ((or parsley if you hate cilantro))
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • mist olive oil or grapeseed oil (for waffle maker)
  • Optional Toppings
  • sliced grilled protein (seitan, tofu, turkey, chicken, etc.)
  • sliced tomatoes or cucumbers
  • fat-free greek yogurt
  • salsa
Instructions
  1. Mix wet batter ingredients
    • Mash the avocado in a bowl until smooth.
    • Stir in lime juice, minced garlic, and chopped cilantro.
  2. Whisk the dry ingredientsIn another bowl, whisk together the flour, baking powder, and salt.
  3. Mix wet and dryBeat the eggs and almond milk into the avocado mixture until smooth. Slowly add the dry ingredients and mix until just combined.
  4. Make the waffles
    • Lightly grease the waffle iron with olive oil or non-stick spray. Preheat according to the manufacturer’s instructions.
    • Pour the batter into the waffle iron (adjust portion size to fit your waffle maker).
    • Cook for about 4-5 minutes or until golden brown.
  5. Finish and serve

    Top with grilled protein, fresh veggies, greek yogurt, or salsa for a complete meal.
