We ❤ this recipe so much because of how versatile it is.

It's a simple and perfect base for a sweet yet healthy brunch menu, savoury waffles, or seasonal winter or fall spices.

If the sweet potato isn't sweet enough, add a tbsp of maple syrup or sprinkle stevia/monk fruit.

For spices, use nutmeg, cinnamon, and ginger for a sweet recipe. Allspice, cumin, turmeric, smoked paprika for savoury waffles. Or get creative and share your twist with us.

Ingredients
  • 1 medium ripe avocado (200g)
  • 1 cup sweet potato puree (240g, about 1 large sweet potato)
  • 2 large eggs
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt (optional)
  • Olive oil or non-stick spray (for waffle iron)

Instructions
  1. Prep avocado and sweet potatoMash the avocado in a bowl until smooth. Mix with the sweet potato puree.
  2. Whisk cornstarch and spices

    In another bowl, whisk together the cornstarch, sea salt, and your spices.

  3. Combine eggs, mashed ingredients, and dry ingredientsBeat the eggs into the avocado-sweet potato mixture, then fold in the dry ingredients until smooth.
  4. Make waffles
    • Lightly grease the waffle iron with olive oil spray and preheat according to the manufacturer's instructions.
    • Scoop the batter into the waffle iron (adjust portion size based on your waffle maker). Cook for 4-5 minutes or until golden and firm.
