Avocado Ricotta Spelt Waffles

Ingredients
    Batter
  • 1 avocado (ripe, pitted, and peeled)
  • 1 cup ricotta cheese
  • 2 large eggs
  • 1/2 cup spelt flour (or whole wheat)
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 tsp baking powder
  • 1 mist olive oil (mist or wipe waffle maker with neutral oil)
  • 1/8 tsp sea salt

  • sauteed spinach
  • nutritional yeast
  • sliced cherry tomatoes
  • egg (fried, poached, scrambled, etc.)
Instructions
  1. Prepare the batter

    Combine the avocado, ricotta cheese, and eggs. Use a blender, food processor, masher, or fork. Blend up until smooth.

  2. Mix dry ingredients

    In a mixing bowl, whisk together the spelt flour, garlic powder, black pepper, salt, and baking powder.

  3. Combine wet and dry

    Pour the avocado-ricotta mixture into the dry ingredients. Gently fold until just combined. The batter will be thick and creamy.

  4. Preheat the waffle iron

    Lightly grease the waffle iron with olive oil or non-stick spray and preheat it according to the manufacturer's instructions.

  5. Cook the waffles

    Pour the batter into the waffle iron (amount depends on the size of your waffle maker). Spread it evenly and cook until golden brown and slightly crispy, about 4-5 minutes.

  6. Serve

    Plate the waffles and top with sautéed spinach, a sprinkle of nutritional yeast, sliced cherry tomatoes, egg, or any other toppings you enjoy.
